Oatmeal Raisin Muffin is an easy all-in-one pot recipe. Very Easy to make. Still, healthy with iron rich raisins and fibre rich wholemeal and oatmeal flour. Wholemeal flour is nothing but the coarsely ground wheat grains, retaining its natural nutrients and oatmeal flour is just ground oatmeal. With the double goodness of milk and yoghurt, these Oatmeal raisin muffins are a great choice for morning tea or any tea time snacks or for kids lunch box.
Being a mom, I start and end my day in the kitchen. My thinking hat is always on for what to cook for the next day and what to pack in the lunch box. Easy and handy recipes like this often helps when we run out of ideas or ingredients.
I admit. I don’t like oats and my family doesn’t eat oats too. I bought Oatmeal few weeks before to try something different and I ended up trying this first in Elsa’s playcentre cooking with kids. It did came well. A few times, I have tried with different ingredients. But this is the first time, I am making a perfect muffin with my own recipe. Of course, I have taken recipe references. Still, in baking it is a challenge in understanding recipes and trying different alternatives. I believe I have got that understanding at least for this easiest muffins.
- 1 cup - Ground Oatmeal
- 1 cup - Wholemeal Flour
- 1 cup - Milk
- ½ cup - Yoghurt
- 1 large Egg
- ¼ cup - Raisins
- ¼ cup - Raw sugar
- ¼ cup - Vegetable Oil
- 1 Tbsp - Honey
- 1 tsp - Pure Vanilla Essence
- 2 tsp - Baking Powder
- ½ tsp - Salt
- Preheat oven to 220°C before you start preparing your ingredients.(It just takes 10 mins)
- Add all the dry and wet ingredients in one bowl in no particular order.
- Mix well. Don't over mix.
- Grease muffin tray or keep the parchment cups and scoop in the mixed batter just over half.
- Fill the cups evenly ( this avoids overcooked and under-cooked muffins)
- Bake for about 20 mins or just test it with a toothpick. If it comes out clean, muffins are done.
I made these muffins with playcentre toddlers, in one of the cooking sessions. Despite of adding ingredients randomly with inappropriate measurements, it tasted good. This is such a versatile recipe. You can actually swap flour with all purpose flour without yoghurt / without raisins or with any other dry fruits like blueberry. There are only few recipes which doesn’t need big effort or attention and still versatile. This is one of such recipes. Try , test and taste it!!!
